Ozarks Today Recipe: Apple Jicama Slaw

Chef Chris Lemons joined Ozarks Today on Friday, Oct. 25 to share a recipe for Apple Jicama Slaw.  He is the chef of Cantina Laredo and Black Oak Grill in Branson.

RECIPE:
Rosemary garlic spread ...... 1 cup
Jicama, 1 1/2" julienne ....... 4 cups
Fuji Apples, Unpeeled, 1 1/2" Julienne... 4 cups
Green Onion, Sliced fine .... 1/2 cup
Parsley, Chopped fine ........ 2 TBLS.
1. Use Mandolin to julienne the jicama and apples.
2. Measure and combine all ingredients in a mixing bowl.
3. Slaw is held at 33-40 degrees F.
Rosemary Garlic Spread
Mayonnaise ....................... 1 quart
Smoked garlic paste ........... 1 cup
Honey .............................. 1 cup
Mustard, Creole ................ 1/2 cup
Fresh Rosemary, minced... 1/4 cup
Salt ................................. 1/4 tsp
Black Pepper ................... 1/2 tsp
Lemons Juice, Fresh ........ 2 TBLS
1. Combine all ingredients in mixer and process until incorporated.
2. Hold at 33-40 degrees F.
